Who doesn’t love a hot & fresh cookie right out of the oven? I know I sure do…
But, we all know that cookies aren’t necessarily the healthiest thing for us. Whether it is the bleached flour, loads of white sugar, or little to no nutritional value. Well, it doesn’t have to be that way. What if we could have cookies that we enjoy and are good for us? Sounds too good to be true, I know. But, I created a recipe that truly is both good for you and DELICIOUS!! Without further ado…
Bella’s Sunflower Butter Banana Oat Cookies.
Gluten-free. Refined sugar-free.
- 2 cups of gluten-free oats.
- 2 Mashed bananas.
- 1/2 cup of sunflower butter.
- 1/2 stick of butter.
- tsp baking soda.
- Pinch of salt.
- 1 egg.
- 1/4 bar of 92% dark chocolate.
- 1/3 cup of raw milk.
Get all your ingredients out om the counter ready for use. Start by adding 2 cups of dry gluten-free oats to a large mixing bowl. Then add in the rest of the ingredients. Mix them all together until thoroughly combined.
Grab a big cookie sheet and line it with parchment paper. You will be able to make around 12 medium size cookie balls, make sure they each have enough space around them to expand some.
Preheat the oven to 350 F and let the cookies bake for about 10-15 minutes until they are nice and green! Yes, I know what you’re thinking, green?? It is the funniest thing I discovered when creating this recipe. When you bake cookies with sunflower butter and baking soda they have a reaction and turn green, and it is perfectly safe to eat and sort of fun!
Plate and enjoy!! This is definitely the best step in my opinion! Right when they come out of the oven is the best time to eat them as the chocolate is hot and melty! My favorite thing to do is get a nice cold glass of milk to dip these hot cookies in!
